In a skillet, add the olive oil, onion, and garlic, and sauté.
Add the tilapia cubes and season with salt and black pepper. Mix until the tilapia cooks and flakes. It's important that there is no more liquid in the skillet.
Turn off the heat and squeeze the lemon. Stir.
Add the cooked and mashed potato and mix well.
Remove from heat and let it cool for about 10 minutes.
Gradually add the all-purpose flour until it reaches the right consistency for shaping the croquettes.
Then, add the chopped parsley and mix a bit more.
Season with a little more salt and add the flour little by little.
Shape the croquettes as you prefer.
Brush the preheated Air Fryer with olive oil.
Place the croquettes in the Air Fryer and brush them with oil on top.
