Ingredients
 

Cream

  • 8 tbsp of Butter 5.6 oz (160 g)
  • 1 cup of Powdered sugar 5 oz (140 g)
  • 1 cup of Heavy cream 7 oz (200 g)
  • 3 tbsp of Dulce de leche 2.1 oz (60 g)

Assembly

  • 7 oz of Biscoff cookies (200 g)
  • 1 and 1/2 cups of Chopped walnuts 5.3 oz (150 g)
  • 7 oz of Dulce de leche (200 g)

Instructions
 

Cream

  • In a bowl, place room temperature butter and sifted powdered sugar.
  • Mix a bit with a spatula, then you can start the mixer.
  • Beat until it becomes a fluffy and homogeneous cream.
  • Mix the heavy cream with the dulce de leche and add it to the butter mixture.
  • Stir gently to avoid curdling.
  • If it curdles, just microwave for 20 seconds and stir again.
  • It will be homogeneous.

Assembly

  • Take a 7-inch (18cm) diameter springform pan.
  • Line the bottom with Biscoff cookies.
  • Then 1/3 of the cream.
  • On the top, add some chopped walnuts.
  • Another layer of cookies.
  • More cream.
  • More chopped walnuts.
  • More cookies.
  • Finish with cream.
  • Add a bit more chopped walnuts.
  • And finish with Biscoff cookies.
  • Place in the freezer for 1 hour.
  • Cover with dulce de leche and finish with chopped walnuts.
  • Return to the freezer for another 30 minutes.
  • After this time, run a spatula along the sides.
  • Place a glass under the pan and gently release the sides.
  • Remove to a plate using a thick spatula.

Notes

Tips:
– Valid to: 5 days if stored in the refrigerator and 60 days if stored in the freezer.
