How to Make Mini Sweet Coconuts

Ingredients
Filling
- 6.88 oz Condensed Milk (195 g)
- 1 unit of Egg Yolk
- 3.38 fl oz Coconut Milk (100 mL)
- 1.76 oz Grated Coconut (100 mL)
Chocolate Shell
- 14.11 oz White Chocolate chopped (400 g)
- 3.53 oz Milk Chocolate (100 g)
Instructions
Filling
- In a saucepan off the heat, combine condensed milk and egg yolk and mix
- Add coconut milk and grated coconut, then heat over medium heat while stirring constantly
- Once it starts boiling, reduce the heat and continue stirring for just 1 minute after it boils
- Turn off the heat and transfer to a plate
- Cover with plastic wrap in contact and let it cool to room temperature
Chocolate Shell
- Melt the white chocolate in the microwave in 30-second intervals (CAUTION: If using high-quality chocolate, tempering may be required. Here’s a video link I made on the subject: https://cknj.com.br/149
- Take the BWB 9436 mold and fill it with chocolate up to the marking
- Tap the mold on the counter to remove air bubbles from the chocolate
- Place the other 2 parts of the mold, press slightly
- Refrigerate for about 5 minutes or until the mold turns whitish
- Remove the excess of the chocolate around the mold and carefully unmold
- Repeat the process with all the chocolate
- Heat a metal surface for about 10-20 seconds over the stove flame and take one side of the spheres
- Press until it melts a little and sticks to the other side
- Repeat this process until all the spheres are stuck together
- Now, with the melted milk or dark chocolate, pass on the hands with gloves
- Make circular movements as if you were shaping the spheres, this will make them have melted chocolate around them, but in an irregular way
- Once done, place the spheres on a baking sheet lined with parchment paper and refrigerate for about 3 minutes
- Remove from the refrigerator and once again apply the melted chocolate, using gloves
- Return to the refrigerator, and after it has cooled, give them another layer of chocolate
- This will make them look like dried coconut
Assembly
- After the chocolate has dried, take a craft knife and cut the tips of the spheres
- Put the filling in a piping bag and fill all the spheres
