How to Make Jalapeño Pepper Sauce

Ingredients
- 7 units of Jalapeño peppers approximately 5.29 oz (150 g)
- Boiling water
- Cold water
- 1/3 cup of Olive oil 2.7 fl oz (80 mL)
- 1 unit of Bay leaf
- 1 unit of Chopped onion
- 4 cloves of Sliced garlic
- Chives chopped to taste
- 1/2 cup of White vinegar 4.06 fl oz (120 mL)
- 1 tsp of Sugar 0.18 oz (5 g )
- 1 tsp of Salt 0.18 oz (5 g )
Instructions
- Place the washed peppers in a pot and cover with boiling water
- Let it sit for 1-2 minutes
- Then place in cold water and let it sit for 2 minutes to cool completely
- Remove and place in a sieve to drain
- In a frying pan, add olive oil, bay leaf, onion, and garlic
- Sauté until the onion and garlic begin to golden
- Turn off the heat and add the chopped chives
- In a food processor or blender, place the blanched peppers, then add the hot mixture from the pan
- Add vinegar, sugar, and salt
- Blend for 2-3 minutes
- Place in a sterilized jar
