How to Make Chocolate Puff Pastry Sfiha
Have you ever thought about making chocolate puff pastry sfiha at home? This is a divine recipe and very easy to prepare. Let's learn how do prepare it!
Equipment
- Refrigerator
- Oven
- Microwave
Ingredients
- 7.05 oz of Puff Pastry (200 g)
Filling
- 6.3 oz of Chocolate chopped (180 g)
- 3.5 oz of Heavy Cream (100 g )
- 2.8 oz of M&Ms candies (80 g)
Instructions
- Take the puff pastry I taught in the last video and roll it out, about 15.75 inches (40 cm) long
- Try to roll it out more evenly
- Take a little less than half of the dough, for this recipe we'll use 7.05 oz (200 g) of dough. It's important to use the knife as if it were a guillotine and not pull it all, dragging the butter
- Roll out this piece of dough thinner, trying to make it into a square of about 11.81 inches (30 cm)
- Roll it up tightly like a roulade
- Cover it with plastic wrap and freeze for 10 minutes to cut more easily
- Cut the dough in half
- Then cut each side in half again and then in half again, forming 8 rolls. Look at that layer of dough and butter
- Dust the fingertips with flour and gently open the dough
- Do not press the edges, gently press the sides and bottom
- If you want, you can open it further by gently spreading your fingers inside
- Then fit them into a honeycomb-shaped mold; the one I used here is 2.36 inches (6 cm) in diameter and I think it's an excellent size
- Press to fit well, when finished, freeze for 15 minutes
- Meanwhile, preheat the oven to 446°F (230°C) for the same time
- With them chilled, place the upside-down molds on a baking sheet lined with parchment paper
- Make some holes with a fork in the bottom of the molds
- Place another sheet of parchment paper on top
- And put a baking sheet to exert force and prevent the dough from rising too much
- Place some weight on this baking sheet or use a heavier baking sheet
- Bake in a preheated oven at 446°F (230°C) for 8 minutes
- After this time, reduce the temperature to 392°F (200°C) and bake for another 5 minutes
- Remove the baking sheet and the top parchment paper and see if it’s still too white. If yes, leave it for a few more minutes until it starts to brown
- Then fill with the chocolate ganache and decorate with M&Ms candies
Notes
Tips:
– Valid to: 5 days under refrigeration, but each passing day, the dough becomes less crispy.
You can bake the pastries, let them cool, then put them in the freezer and store them for up to 90 days frozen. When serving, place them on a baking sheet with parchment paper and bake in a preheated oven at 392ºF (200ºC) for about 5-10 minutes. Then just fill and enjoy.
